Tharid Recipe for Saudi National Day

Tharid is the Arabian Gulf variation of Levantine fatteh, with more bread and a substantial meat and vegetable stew.

Prepare the tasty foundation. Heat oil and ghee in a pan, then add whole spices and stir for one minute.

Next, add the chopped onion, ginger garlic paste, and green chilies and simmer for 5 minutes.

Finally, add the chopped tomato and simmer until pulpy.

Add salt, tomato paste, dry lemon, and all spice powders to the pan and stir.

After 2–3 minutes, add the mutton and toss till the spices coat it.

Fill the pan with boiling water, cover, and simmer until the mutton is cooked.
