Muffins with Pumpkin Streusel

These pumpkin streusel muffins are perfect for breakfast, dessert, or a quick snack.

Turn the oven on to 375 degrees. Butter and sugars should be creamed together for about 5 minutes until light and fluffy in a large bowl.

Mix in the pumpkin, buttermilk, eggs, molasses, and orange zest until well combined.

Two-thirds fill muffin tins that have been oiled or lined with paper.

To make the crumbly topping, whisk together flour, brown sugar, and butter.

Add to the mix at the end. After 20-25 minutes, check the muffins by inserting a toothpick to see if it comes out clean.

After 5 minutes of cooling in the pan, transfer to a wire rack to finish cooling.
