Preheat oven to 425°. Roll dough into a 1/8-inch circle on a lightly floured surface and place in a 9-inch pie pan.

Cut crust 1/2 in. beyond plate rim; flute edge. Prep filling in fridge.

Cover sweet potatoes with water in a medium saucepan. Bring to boil.

Reduce heat; cook uncovered for 13-15 minutes until tender.

Return potatoes to pan after draining. Smoothly mash and chill to room temperature.

Cream butter and sugar in a bowl. Add eggs, mix. Stir in milk, 2 cups mashed sweet potatoes, vanilla, cinnamon, nutmeg, and salt.

Put in crust. Bake 15 minutes. Reduce heat to 350° and bake 35-40 minutes until firm or a knife inserted in the center comes out clean .
